Atriplex cinerea/Grey Saltbush is an edible species from the Chenopodiaceae/Goosefoot family. It has a distribution in saline habitats and is photographed here on a beach at Dunally. This hardy fast growing plant thrives in open spaces and in my clay garden has grown from a 10 centimeter tube-stock to a bush of over 1 square meter in less than a year! The leaf vegetable holds structure through the roughest cooking so I cut the larger leaves in half. We deep fry the leaves for a crunchy garnish or add them to any well-cooked meal.
