Acacia dealbata/Silver Wattle is an edible species from the Mimosaceae/Wattle family and has a distribution in Tasmania’s dry gum forests and open grasslands, photographed here beside the Tasman Highway. The yellow pollen covered blossom’s are edible and have a pleasant floral taste, people with pollen induced asthma or hay-fever should probably avoid this food. We add the fluffy blossom’s to pikelets and muffins. We also steep the blossom’s in boiling water to remove the bright yellow colour and use this liquid to colour rice and jelly, we call this Bushman’s Saffron.
