Wahlenbergia species are slender herbs from the Campanulaceae/Bellflower family with edible blue bell-shaped flowers during spring and early summer. Seven species of Wahlenbergia occur in Tasmania and are usually found in dry grassy vegetation but also in woodlands and rocky mountain forests, photographed here in nature at Primrose Sands and in my garden. Some species of Wahlenbergia are endangered, so I don’t eat the flowers from nature but purchase the plants or seeds from my local nursery and grow them in my garden for consumption. The pretty blue flower has a delicate flavour and is best picked fresh and used as a garnish on cold foods such as salads and desserts.
